Ingredients

    1 tbsp Olive Oil
    1/2 cup chopped onions,
    1/2 cup diced celery
    1 tsp minced garlic
    1/4 cup whole wheat flour
    2 (1 tsp) chicken flavor bouillon cubes
    4 cups Water*
    2/3 cup Instant Nonfat Dry Milk*
    2 1/2 cup chopped frozen broccoli, cooked
    1/2 tsp dried thyme
    1 cup shredded cheddar cheese
    salt and pepper to taste

Directions

* 2 cups nonfat milk may be subsituted for the dry milk and 2 cups water

In a large saucepan, cook the onion, celery and garlic in the olive oil on low heat for about 5 minutes. Add the flour and the thyme, stir for five minutes. Whisk in 2 cups of water, simmer for 5 minutes, then add dry milk and remaining water. Heat the soup, but do not boil. Add the broccoli and heat through, about 5 more minutes. Puree soup with blender or in food processor. Add cheddar cheese and stir to combine. Makes four 1 1/4 cup servings.
