My favorite Christmas treat from my great aunt. My favorite Christmas treat from my great aunt.
Number of Servings: 12


    1 cup Whole Wheat Flour
    1 cup All Purpose Unbleached Flour
    1 tsp Baking Soda
    1 tsp Baking Powder
    1/2 tsp Salt
    2 Tbs Butter
    1/2 cup Boiling Water
    2 Tbs Orange peel or rind or zest
    1/3 cup Orange Juice
    1 cup Granulated Sugar
    2 tsp Vanilla Extract
    1 large Egg, Beaten
    1/2 cup Chopped Pecans


Line 8 x 4 x 2 baking pan with foil or grease pan very well. Melt butter in boiling water in medium bowl. Blend in orange juice, orange rind, sugar, vanilla and egg.

Sift dry ingredients over orange mixture and stir until flour is just dampened. Add nuts. Batter will be lumpy.

Pour into pan and bake at 350 for 50 mins to 1 hour or until toothpick inserted in center comes out clean. Remove from pan, cool and wrap in aluminum foil. (Slices better the next day.)
