Introduction

Number of Servings: 6

Ingredients

    All ingredients are to my liking and may be adjusted:

    1 cup diced onions
    1/2 cup diced celery
    2 zucchini, sliced
    can diced tomatoes
    1 cup tomato sauce
    1 lb lean ground beef
    1 Tbsp oregano, dry
    1 tsp. garlic powder
    1/2 tsp. basil, dry
    salt & pepper to taste
    crushed red pepper to taste (optional)

Directions

Slice zucchini, finely dice celery and onion. Set aside. Spray non stick sauce pan and saute zucchini about 3 minutes. Add celery and onion and saute until onion is translucent. Add canned tomatoes and tomato sauce, extra water if needed. Add seasonings (to taste). Simmer on medium. Next, put beef in large mixing bowl and add salt, pepper, garlic powder, parsley flakes (all to taste and may be changed up with other spices). Mix by hand and roll into mini meatballs, about a heaping Tbsp. in size. Place in microwave on high for about 3 minutes (to remove extra fat and partially cook). Drop into sauce and continue to cook until done. Serve over pasta, rice or couscous.

Serving Size: Makes 6 servings evenly divided.
