    olive oil, 2 tsp
    fresh baby spinach, 2 cups
    potato, 1 cup (about 1 potato)
    fresh eggs, 2 (can use egg substitutions, or only egg whites)
    cheese 2 tablespoons


In a skillet coated with 2 teaspoons olive oil, saute 1 cup shredded potato until golden and tender, then add 2 cups fresh baby spinach. Once the spinach has slightly wilted, add 2 eggs. Top with 2 tablespoons cheese. Sprinkle with black pepper to taste. I like eating this with a 1/2 cup of grapes.
