    2 Beets, quartered
    3 lrg Carrots, quartered
    2 Sweet potatoes, quartered
    1 Red Onion, quartered
    1/3 stick butter cutting into quarters
    Salt & pepper to taste


Preheat oven to 350 degrees. Cover large casserole dish in a single layer of veggies. Place pats of butter around the dish. Salt & pepper to taste. Cover and cook 60-90 minutes until veggies are tender.
