    4 medium bananas, sliced thin
    2 tbsp lemon juice
    1 1/3 cup coconut flour
    1/2 tsp baking powder
    pinch sea salt
    1 cup melted coconut oil
    1 cup shredded, unsweetened, dried coconut
    1/2 cup steviva blend (or 1 cup of raw cane sugar or sweetener of choice)
    2 large eggs, slightly beaten


Preheat oven to 350 degrees. Lightly grease a 9x13" baking dish.
Peel and slice bananas thinly. Cover with a mixture of lemon juice and cold water.
Combine all dry ingredients. Add eggs & oil. Mix well. The mixture should be the consistency of a soft cookie dough. If not add either more coconut flour to make stiffer or either a little more oil or another egg to make softer.
Put half into baking pan. Press down firmly. Add drained sliced bananas in a thin layer on top. Top with remaining dough mixture.
Bake for approx 30 minutes or until golden brown.
Cool completely then cut into bars.
Makes 32.

Each serving contains approx 2/3 of a tbsp of coconut oil.
