Introduction

This recipe is from the show "Extra Virgin" on the Cooking Channel. I tried to lighten it up just bit by using lower fat milk and cooking spray to prepare the pan. Ingredients

    1 1/2 cups all-purpose flour
    1 cup Sugar
    1 1/2 Tbls Baking Powder
    Zest and juice of 1 large orange (approx .25 cup juice)
    3 large eggs
    1/2 cup warm milk, 1%
    4 Tbls Extra Virgin Olive Oil
    1 Tbls Powdered Sugar sifted over cake


Directions

Preheat the oven to 360 degrees. Spray 9 by 13 inch baking pan with butter flavored cooking spray.
Add flour, sugar, baking powder, orange zest, orange juice, eggs, milk and oil. Beat with a hand mixer until thoroughly mixed together, about 3-4 minutes.
Add the batter to the prepared pan and bake for about 25 minutes. Test the cake with a toothpick inserted into the center. If it comes out clean, the cake is done.
Let cool for about 30 minutes on the counter, then flip the cake out of the baking pan. Slice and serve sprinkled with powdered sugar.

Serving Size: makes 15 servings (approx 2.5 inches sqaure)
