    ~1/2 lb crimini mushrooms, sliced
    ~1 medium onion, cut in half then sliced into thin half-rings
    ~2 cloves garlic
    ~3 teaspoons + 2 Tablespoons butter
    ~2 tbsp flour
    ~1/2 cup mushroom OR beef broth
    ~1/2 cup red wine (or more broth)
    ~3/4 cup milk
    ~1 8oz Seitan O' Greatness (I have a recipe modified to taste
    more like beef)
    ~Salt and pepper to taste
    ~2 teaspoons worcestershire sauce (several shots from the bottle)


In a medium saucier or saucepan, melt 1 teaspoon of butter over medium-high heat.

Add the garlic and half of the mushrooms and a pinch of salt and saute for 5-7 minutes, or until browned and all the liquid is evaporated.

Move mushrooms to a bowl, add another 1 tsp. butter to the pan, and cook the rest of the mushrooms. If you try to do all the mushrooms at once they will only steam, and never brown.

Add mushrooms to the bowl, add 1tsp butter to the skillet and cook onions until wilted and browning. Add onions to mushroom bowl.

Add 2T butter, melt, and whisk in the flour. The flour and butter should come together into a roux (if it's too dry, add a tiny drizzle of oil). Cook the roux for 2 minutes.

Whisk in the broth, wine & milk. Once smooth, add the mushrooms and onions and reduce the heat to medium, and let the gravy come to a low simmer, stirring occasionally.

Add the chopped seitan to the heating gravy. Since it's pre-cooked, you don't need to fry or heat it up separately (although if you do want a crunchier texture, you could saute it lightly for 3 minutes.... but I think that's just one more pan to wash).

When your gravy has come to a boil and thickened, turn off the heat, stir in the salt, pepper & worcestershire and serve over mashed potatoes or whole wheat egg noodles!
