    50g white beans soaked overnight
    4 rashers smoked lean bacon (optional)
    4 small shallots finely chopped
    2 garlic cloves crushed
    2 celery sticks chopped
    2 tsp fresh chopped thyme
    2 - 3 tsp veg stock bouillon powder
    150ml skimmed milk
    fresh ground black pepper


Rinse the beans well, place in a large saucepan, cover with water and bring to the boil. Simmer gently for 30 mins. Im a separate non-stick pan dry fry the bacon (if using), shallots, garlic and celery for 5-6 mins till soft. Place in the saucepan with the beans, add the thyme and bouillon powder. Reduce heat and simmer gently for 30 minutes topping up with water as required.
After 30 minutes the beans should be soft. Ladle the soup into a food processor and blend until smooth. Return to the heat and adjust the consistency with the milk. Season well with black pepper and serve hot.
