Number of Servings: 2


    3 eggs
    1/4 cup chopped onion
    3 cups fresh spinach
    1 cup tomatoes diced
    1 cup mushrooms chopped
    2 pats butter (2 tsp)
    pam to spray pan
    1 tsp salt (more to taste)
    2 tsp pepper (more to taste)
    1-2tbls milk (for the scrambled egg)
    2oz breakfast sausage cooked (if desired)


Heat a skillet sprayed with pam. Meanwhile, quickly chop the onion. Add onion to hot skillet. Chop mushrooms, and tomoatoes. Scramble eggs with milk adding dash of salt and pepper to eggs. After onion is translucent, add in mushrooms, dash more salt and pepper. Add 1 pat of butter. Add in spinach. Cook down. Chop up cooked breakfast sausage. Add to skillet. Add in the other pat of butter, add eggs, scramble everything together. Enjoy!
