This banana bread is dense and slightly spicy. This banana bread is dense and slightly spicy.
Number of Servings: 18


    1/2 cup applesauce
    1/2 cup orange juice
    1 cup tightly packed brown sugar
    1 large egg plus 1 egg white
    1/4 cup 2% milk
    1 teaspoon vanilla extract
    2 cups bananas, about 4-5 bananas
    2 cups whole wheat flour
    1 teaspoon nutmeg
    1 teaspoon cinnamon
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup chopped pecans


Preheat the oven to 350.
In a medium mixing bowl, whisk together the applesauce, juice, and sugar. Add the eggs, milk, and vanilla. Whisk until blended. Add in the bananas.
In a small bowl, mix the dry ingredients. Gently fold the dry ingredients into the wet ingredients.
Spoon the batter into 18 greased muffin cups.
Bake 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
