    15oz lowfat Ricotta
    4.25 oz sun dried tomatoes in olive oil
    1/4 tsp salt
    2 tbsp parmesan
    1 lb chicken, grilled and shredded
    8 slices low sodium bacon, cooked and crumbled


Preheat oven to 350

In a blender, whirl together ricotta, tomatoes and their oil, salt, and parmesan. Stir in bacon.

Fill each crepe with 2 tbsp ricotta mixture and top with 1/4 cup shredded chicken.

Heat filled crepes for 5 minutes or until warmed through.

Serving Size: Makes 16 (2 tbsp) servings plus 1/4 cup chicken
