Introduction

This is sort of a variation on vegetarian fajitas, except I added no salty ingredients. I kept it simple for the sake of quick cooking, and it turned out nicely. Ingredients

    1 Medium white Onion - halved,sliced into 1/4" slices
    1 Yellow Squash - sliced into 1/4" slices
    2 Bell Peppers - sliced into 1/4" slices
    12 Vegan Corn Tortilla - warmed
    1 tbsp Garlic powder
    1 tbsp Cumin powder
    1 tsp Coriander seed
    1/2 cup Lemon juice
    3 tbsp Olive Oil

Directions

It's pretty easy (I didn't really time it accurately).

Warm up the tortillas either in the microwave, or in a low-heat oven. Keep them warm.

Put the oil into a pan and add the onion to it. heat this over medium-high heat until the onion begins to turn translucent. then add the other veggies, (Well, literally, the onion is the only veggie, but who's keeping score?) and drizzle them with the lemon juice and shake on the spices. Stir and turn it all over medium-high heat until the squash softens to perfection.

Done! I put all of this into a serving bowl and just brought that to the table with the tortillas. Just pick out veggies with some tongs, fold them in a tortilla, and enjoy.
