Ingredients

    1 Egg, beaten
    1 lb. chicken tenderloin, chopped
    1 small onion, chopped
    2 garlic cloves, chopped,
    2 cups Jasmine rice, cooked
    1 can black beans, rinsed and drained
    1 bag Mexicorn
    .5 jar sweet peppers, chopped
    1 jar taco sauce 7 oz.
    1/4 cup cilantro, chopped

Directions

Stir egg in large skillet coated with cooking spray. Remove and set aside.

In same skillet, stir fry chicken and onions, til chicken is no longer pink. Add garlic, sir for 1 minute. Add other ingredients, except egg. Heat thoroughly. Stir in reserved egg.
