This makes a quick, easy, and filling meal. This makes a quick, easy, and filling meal.

    1 whole wheat flour tortilla
    1/2 cup sweet bell pepper, chopped
    1/2 cup onion, chopped
    1 tsp olive oil
    1/2 cup black or pinto beans
    1/2 cup shredded cheese (2%)
    1/4 cup salsa


Heat oil in a skillet over medium heat, add in peppers and onions and saute until tender crisp. Heat a skillet or griddle to medium heat-spray with non stick cooking spray. Throw the tortilla on-top one half of the tortilla with beans, cheese, and pepper mix. Fold over and cook until lightly brown-flip over and cook until the other side is brown. You can add in more veggies to suit your taste or use chicken instead of beans. We normally use cheddar (used to figure nutritional info) or pepper jack cheese in ours but whatever shredded cheese you like works great. Serve with salsa.

Serving Size: Makes 1 quesadilla
