    1 c. chopped onion
    4 cloves garlic
    1 c. zucchini, diced
    1 can sliced carrots
    1 can cut breen beans
    1 can Rotel tomatoes, or other canned tomatoes
    6 c. Kitchen Stock
    17 oz. lean ground turkey breast
    1 tsp. basil
    1/2 tsp. dried oregano
    4 c. fresh, sliced spinach


Brown ground turkey; add onion, garlic, and zucchini. Cook until onion is tender. Add carrots, green beans, tomatoes, vegetable stock, basil, and oregano; bring to a boil. Reduce heat and simmer for 10 minutes. Stir in spinach and heat for 10 minutes.
