    0.5lb of tofu, cubed
    2 tbsp olive oil
    1 large garlic clove minced
    4 cups chopped kale
    0.25 tsp salt
    0.25 tsp black pepper
    1 tbsp balsamic vinegar
    0.25 cup toasted pine nuts


-Saute tofu until it starts to brown

-Add the garlic, kale, salt, pepper and balsamic vinegar

-Cover with lid and saute for 5 extra minutes

-Garnish with pine nuts and serve.
