Introduction

Delicious low-carb, high-protein dinner option with very little effort! Delicious low-carb, high-protein dinner option with very little effort!
Number of Servings: 6

Ingredients

    2 T olive oil
    6 cloves garlic, chopped
    2 cans no salt added stewed tomatoes
    1/2 t salt
    1 t crushed red pepper flakes
    16 oz shrimp
    16 oz scallops
    1 cup okra, sliced (if desired)
    1 T fresh or dried parsley

Directions

Saute chopped garlic in large pan in 1 T olive oil over medium-high heat. When garlic starts to sizzle, add tomatoes, salt and pepper. Bring to boil, then lower heat, add okra (optional) and simmer for 30 minutes. In a separate pan, cook shrimp and scallops in 1 T olive oil over medium-high heat for about 2 minutes, or until shrimp turns pink. Transfer seafood into tomato mixture. Add parsley and heat for a few minutes more to blend flavors.

Those seeking more carbs can serve over pasta or rice or with crusty bread. Otherwise, it's great on it's own, served with a salad.

Serves 6. Each serving is approximately 1.75 cups.
