    1 can yellow sweet corn in water - drained and rinsed
    1 can black beans - drained and rinsed
    1 cup cherry tomatoes - sliced in quarters
    1 cup broccoli florets
    1 green pepper - diced (about 1/2 cup)
    2 oz shredded part-skim mozzarella cheese
    3 T olive oil
    juice of 1 lemon
    1 T balsamic vinegar


Place all but the last three ingredients in bowl, toss together. In small bowl, mix oil, lemon juice, and balsamic vinegar together. Pour over salad and toss. Refrigerate at least 1 hour to let flavors meld. This makes a great main course salad.
