Ingredients

    2 Large Sweet Potatoes
    1/4 cup chicken broth
    2 Tbsp. light sour cream
    salt and pepper to taste

Directions

Peel 2 large Sweet Potatoes and cut into small pieces.

Boil until tender, drain. Mash with fork, broth and sour cream. Season to taste.

    I love sweet potatoes but I thought adding the chicken broth took away from their natural sweetness. Didn't like the flavor. I'll stick with baked. - 5/26/08
