*Extra Virgin Olive Oil, 1 tbsp (remove)
Water, tap, 1 cup (8 fl oz) (remove)
Thyme, ground, 1 tbsp (remove)
Rosemary, dried, 1 tbsp (remove)
Pepper, black, 1 tbsp (remove)
*Salt (table), 1 tsp (remove)
Garlic, 3 cloves (remove)
*Jennie-O Turkey Store Turkey Bacon 55% Less Fat, 2 serving (remove)
Beef broth, bouillon, consomme, 1 can (10.5 oz), prepared (remove)
Onions, raw, .5 cup, chopped (remove)
Red Wine, 4 fl oz (remove)
Directions
Pour the red wine and water into the slow cooker crock; set aside.
In a small bowl, combine the herbs, pepper, salt, and olive oil; stir to combine. Using clean hands, rub the oil and herb mixture all over the beef roast. Place the roast into the slow cooker crock. Sprinkle the garlic and onions aroudn the roast and lay the bacon strips over the top of the roast.
Cover and cook on LOW for 5 hours.
Before serving, flip the roast over in the slow cooker, then turn the slow cooker off and let the roast rest in the slow cooker for about 15 minutes. Remove roast to a platter and let it drain for a few minutes.
