Ingredients

4 small potatoes
1.5tbsp. butter (optional--you can cut out 152 calories if you don't use it)
3/4 C. Milk (I recommend using 1/2 first and only add if texture is not smooth)
3oz Mozzarella Cheese
4oz Cooked Chicken Breast (about 1 oz per potato)
Pepper and Salt to Taste
Necessary equipment:

Mixing Bowl
Spoon
Mixer
Cookie Sheet

Directions
First off, you can change this by doing two medium potatoes cut in half or 2 large cut in half.
So I cheated a little and instead of baking them once, I mircowaved them all together for 20 minutes. Otherwise, you have to bake them around 350 to 400 degrees for an hour or so.
Let them cool before cutting them open. It's much easier to cut them in half and refill them that way or you can go the traditional way and cut them halfway open.
Using a spoon, scoop out the insides into a mixing bowl. Repeat for all potatoes being as careful as possible not to damage the skin of the potatoes.
Once finished, use mixer to make potatoes in bowl smooth. Add milk (start with 1/2 a C. to see what the consistancy is before adding the rest), butter and cheese and pepper and salt to taste.
Once smooth, add broccoli and chicken and use a spoon to turn into mixture--do not use the mixer for this!
Using a regular spoon, carefully spoon mixture into each potato.
Top with some cheese (I recommend 1 oz per potato at the most) if you want and put in the oven at 350 degrees for about 10 to 15 minutes (enough to melt the cheese and heat up the insides).
