    Blanched Stinging Nettles, 200g
    Cottage Cheese, 1% Milkfat, 300g
    Lemon Zest, 1tsp
    Nutmeg, ground, 1 tsp
    Black pepper to taste
    Parmesan Cheese, grated, 15g
    Egg, fresh, 2 large
    Sunflower Oil, 1tsp
    Onions, raw, 100g
    Mushrooms, 200g
    Garlic, 2 tsp
    Thyme, ground, 1 tsp
    Pine Nuts, 30g


Fill a clean sink with cold water wash nettles around well to get them clean.

Blanch nettles in boiling water just until they are bright green, about 10 seconds. Drain and place in cold water.

Drain again and squeeze out the water that remains. If there are lot of big stems, you can pick the leaves off, otherwise just chop up finely.

Blend cottage cheese with eggs, lemon zest, fresh nutmeg, parmesan and some pepper.

Heat oil. Saute onion with garlic and sliced mushrooms. When it starts to get translucent add thyme.

Turn off the heat, stir in the chopped nettles and stir in the cottage cheese.

Pour this into baking dish and top with a sprinkle of pine nuts

Bake at 190'C for about 45 minutes or until set.
