    1 egg, beaten
    1/4 c. plain bread crumbs
    2 boneless, skinless chicken breasts pounded to 1/2 inch thickness (calculations used 1 pound)
    2 Tbsp vegetable oil
    1 c. ready to use chicken broth
    1/4 lb mushrooms sliced or cut in half
    2 oz Colby cheese or jack or Colby jack, shredded
    Ramen noodles-broken up


Place egg in shallow dish. Place Bread crumbs in another shallow dish and add the seasoning packet from the noodles. Mix well. Dip chicken in egg, then in seasoned bread crumbs, coating completely. In a large skillet, heat oil over medium heat. Add chicken and cook 2 or 3 minutes on each side until not longer pink inside. (At high altitude it may take longer.) Transfer to platter and cover to keep warm.

In same skillet, combine, broth, mushrooms and broken up noodles. Cook four minutes over medium heat until noodles are tender. Reduce heat to medium low and return chicken to skillet. Sprinkle the top with cheese. Cover and cook for or five minutes until cheese is melted.
