    1 lb boneless, skinless chicken breast
    Cooking spray
    1 t. smoked paprika
    1 t. chile powder
    1/8 t. sea salt
    1/2 sweet onion, chopped (about 1/2 c.)
    1/2 c. nonfat plain Greek-style yogurt
    5T.lowfat buttermilk
    1 - 1 1/2 T. Frank's Hot Sauce
    1 head romain lettuce, chopped
    1 head red leaf lettuce, chopped
    1 yellow bell pepper, thinly sliced
    1 pint grape tomatoes, halved
    2 oz. blue cheese, crumbled


One; Preheat broiler to high. Place chicken on a baking sheet coated with cooking spray. Lightly mist chicken with cooking spray and sprinkle evenly on both sides with paprika, chile powder and salt. Broil 6 -8 inches from heat until center is no longer pink (about 6 minutes per side). Transfer chicken to cutting board and let rest for 3 - 5 minutes before cutting into bite size chucks.

Two: In a blender, puree onion, yogurt, buttermilk and hot sauce. Divide romaine and red leaf lettuce among 4 plates and top with peppers, tomatoes (2 1/2 c. veggies) and chicken (2/3 c). Serve yogurt mixture (1/4 c.) on the side or drizzle on top. Sprinkle with blue cheese (2T.)
