    1 1/2 lbs. ground turkey
    1 pkg. frozen spinach, thawed and drained or one bunch fresh spinach, cleaned, steamed and chopped.
    2 cups salsa
    1 can diced tomatoes
    1 pkg. of 10 flour tortillas
    1 cups low-fat Mexican blend cheese
    1 8 oz. block of light " Neufchatel cream cheese
    spices - ground cumin, garlic powder, salt & pepper


Brown ground turkey in a frying pan until fully cooked. Add drained, cooked spinach (a bunch of fresh spinach works very well in this recipe - just cook as directed) and 1 cup of salsa. Add cumin to taste.

Simmer until all the liquid is cooked away - this will depend on your brand of salsa. Remove from heat and add 8 oz. block of cheese. Mix until melted.

Heat oven to 350 degrees F.

Place 1/3 cup of mixture onto 1 flour tortilla, roll up and place in a greased 9x13 pan.

Mix one cup of salsa with one can of diced tomatoes. Spice to taste with cumin, garlic powder and salt and pepper.

Cover enchiladas with salsa mix and bake for 20 minutes. Remove from oven and sprinkle with shredded cheese. Bake again for five minutes or until cheese is melted.
