Ingredients

8 large tomatoes
40 grams unsalted butter
200 grams cup mushrooms, finely chopped
100 grams shaved ham, finely chopped
2 tbs finely chopped fresh chives
8 small eggs
Directions
Preheat oven to 200 C
Slice tops off tomatoes - do not discard - and using a teaspoon, scoop out pulp. ( the seeds and pulp could be used in a fresh tomato sauce}
Put tomatoes in a deep baking dish.
Melt butter in a frying pan and then add mushrooms. Cook for 7 minutes or until lightly brown and moisture has evaporated.
Add ham and chives/ Stir until combined.
Spoon into tomatoes, pressing down lightly.
Break an egg into each tomato.
Place tomato lids in pan alongside filled tomatoes.
Cover pan with foil.
Bake for 20 minutes or until egg white is just cooked.
Serve hot.
