    1 Cup Eggbeaters
    1 lg.egg
    6 oz fresh spinach steames and chopped
    1 tbsp olive oil
    1 red Bellpepper chopped
    1/2 cup chopped onion
    1 Garlic clove crushed
    1Tsp marjoram or a few fresh leaves
    1Tsp blk pepper ground
    1Tsp each of oregano and tarragon


serves 3
steam spinach,squeze out exess water.
Heat 1/2 tbs oil in skillet add bell peppers and onion cook until tender
add garlic,then add the chopped spinach and spices,
remove from heat.
Beat egg and eggbeaters together,stir in the peppers and spinach,pour into ovenproof frying pan and cook on low
heat for about 10 min.until the bottom of frittata is golden.
Meanwhile turn on broiler,place pan underbroiler, but not too close to the heat for 2-4 min.make sure top does not burn..Remove pan let it cool . serve hot,warm or cold.
