    2 slices white bread, toasted
    1 cup fresh spinach
    1/4 cup feta cheese
    1/4 cup roasted red pepper strips
    3 tbsp light mayo
    1/2 tsp black pepper
    1 tsp basil
    1 tsp garlic powder


1. Mix together the mayo, pepper, basil and garlic powder.
2. Put the feta in a small bowl and mash together with 1 tbsp mayo mixture.
3. Spread remaining mayo mixture on both toast slices.
4. Top one slice with 1/2 cup spinach, half the red pepper strips and feta mixture. Top the other slice with the other half of spinach and red pepper and then quickly mash the two sliced together. Cut in half.
