Tasty, and Healthy stir-fry with a tropical flair! Tasty, and Healthy stir-fry with a tropical flair!
Number of Servings: 5


    3-4 Large Chicken breasts, no skin/no bone - cut into cubes
    2 large mangos, cubed
    1 whole medium sized onion, cut into strips
    1 whole large green bell pepper- cut into strips
    2 cups white rice
    3 tbs of olive oil
    salt/pepper to taste


Follow the directions on the bag for two cups of white rice (or brown, if you prefer - nutrition info will be slightly off).
While that simmers....

Chop Green Peppers, Onions into strips.
Peel mango, then cut into cubes
Cut Chicken breasts into fajita sized strips, then cut in half

Heat 3 TBS of Olive Oil in a wok, or grill pan. Grill chicken. Season with Salt and Pepper, or any other seasonings you like. When cooked, removed from pan and set aside.

Then dump onions, mango, and green peppers in and sautee. When Cooked, Combine with chicken and serve over rice

Serving Size: Makes 6 1-2 cup servings
