Ingredients

    Olive Oil, Extra Virgin, 1/4 cup
    onion, fresh, 1 cup
    Sweet Apple Chicken Sausage, Harris Teeter, 5
    Canned sliced Mushrooms, 0.5 cup
    18 fresh garlic cloves ( leave whole to pick out if desired)
    10 Sweet Pickled Ginger (Japanese) slices diced
    Beans, pinto, 3 cup (2 cans drained and rinsed)
    Harris Teeter 99% Fat Free Chicken Broth, 4 cup/1 container
    Uncle Ben's Converted Rice 1 cup uncooked)

Directions

Saute onions in olive oil. Add sausage, mushrooms, garlic, ginger. Saute Add beans, broth and rice. Bring to boil. Cover and simmer till rice is cooked.
