    4 *Whole Wheat Tortillas
    1/2 lb leftover roasted pork loin, cubed
    1 cup shredded Cheddar Cheese
    1/2 c. low fat Sour Cream
    1 small can diced green chilis
    1 10 oz. can green enchillada sauce


in a baking casserole, fill the bottom with 1/2 of the enchillada sauce. Assemble enchillada. Put them in the casserole. Top with remaining sauce. Add a layer of the cheese on top.

Bake covered in 350 degree oven for 25 minutes.
Uncover for last 10 minutes.
Let set for 5 minutes before serving

Serving Size: makes 4 large enchiladas
