    1 medium head cauliflower, (about 2 lbs), cut into florets (5 cups)
    1/4 cup light sour cream
    1/3 cup reduced-fat cheddar cheese
    Salt and pepper to taste


1. Bring 1 1/2 quarts of water and the cauliflower to a boil in a large pot over high heat. Reduce the heat to medium low and simmer the cauliflower for 15 minutes, or until tender.

2. Drain the cauliflower into a colander. Remove excess water by pressing down on the florets with the lid of a pot or small plate. Transfer the cauliflower back to the pot.

3. Add the sour cream and cheese and process with a hand mixer or immersion blender until smooth. Add the salt and pepper.

Serving Size: Makes 4 3/4 cup servings
