    5oz chicken (cut in half so thin)
    1tbsp vegetable oil
    2 cloves crushed garlic
    2tbsp all-purpose flour
    1/2 link italian sausage
    1 cup Yukon gold potatoes - thinly sliced
    1/4tsp oregano
    1/8tsp rosemary
    1/2 cup white wine
    1/2 cup fresh tomato - chopped
    1 whole lemon, zested, and juiced
    3tbsp butter
    salt, pepper, cracked chili peppers


1. In a large skillet, heat oil for 3-4 minutes over medium heat.
2. Season flour with dry herbs.
3. Dredge chicken in flour, coating evenly.
4. Place chicken in skillet for 4-5 minutes and brown evenly on both sides.
5. Transfer chicken from skillet to parchment lined baking tray.
6. Add sausage and potatoes to the frying pan and cook for 6-7 minutes.
7. Place chicken in 350F oven for 15-18 minutes.
8. Add garlic to the sausage and saute quickly, stir constantly to avoid burning.
9. Add the wine, lemon juice, lemon zest, and tomatoes let simmer over low heat for 5-6 minutes or until volume of liquid has reduced by 1/2.
10. Remove from heat and whisk butter into mixture until just melted. Do NOT reheat.
11. Transfer cooked chicken to platter and drape with sauce.
