Ingredients

    1/4 cup canola oil
    3/4 cup granulated sugar
    2 large eggs
    2 large, very ripe bananas, mashed
    1 cup all-purpose flour
    1 cup whole-wheat flour
    1/2 tsp. salt
    1 tsp. baking powder
    1/2 tsp. baking soda
    2 tsp. ground cinnamon
    1 tsp. vanilla extract
    1 cup fat-free skim milk
    1 Tbsp. vinegar

Directions

Add the vinegar to the skim milk and set aside to sour. Beat the oil and sugar until fluffy. Add eggs and bananas and beat until smooth. In a separate bowl, combine the flours, salt, baking powder, baking soda and cinnamon. Alternate adding flour mixture and soured milk to banana mixture, beating after each addition. Fill greased or paper lined muffin cups 2/3 full and bake in preheated oven at 350 for 17-24 minutes, or until tops are golden brown.
