    1 cup Whole Wheat Couscous
    1 cup chopped Sweet red peppers (bell)
    1 cup chopped Cucumber (with peel)
    1 cup chopped red onion
    1 cup chopped parsley
    1 19-oz can PC Blue Menu canned Chick Peas
    1/2 cup Olive Oil
    3/4 cup White Vinegar
    1 tsp chopped garlic
    1 Tbsp. chopped fresh mint or 1 tsp dry
    1 tsp salt
    Pepper to taste


Prepare couscous according to package instructions. Chop all your veggies and add to the prepared couscous. Mix in the olive oil, vinegar and spices and mix. Refrigerate for at least two hours.

Serving Size: Makes 10 1-cup servings.
