This is a wonderful dish and goes well with broccoli. This is a wonderful dish and goes well with broccoli.
Number of Servings: 8


    1 C pearl barley
    2 tsp Seitenbacher Vegetarian Vegetable Broth
    3 C boiling water
    8 oz sliced mushrooms
    1 medium yellow onion, diced (optional)

1. Add barley to a clean saucepan. Over medium heat, stir until lightly toasted.
2. Carefully add boiling water and boullion. The pan will be hot, so expect this to create a bit of noise and splashing.
3. Lower heat to simmer. Cook covered until barley is soft, about 45 minutes. (Check cooking time on your box. Quick cooking pearled barley only requires 12 minutes to cook.)
4. Steam fry onions, if using; remove from pan.
5. Cook mushrooms until they start to release their liquid.
6. Add freshly ground black pepper to taste.
5. Stir mushrooms and onion, if using, into cooked barley before serving.
