Introduction

Hearty breakfast meal that tastes like oatmeal raisin cookies! Hearty breakfast meal that tastes like oatmeal raisin cookies!

Ingredients

    Oat Meal (Quaker Oats Old Fashioned - dry)
    Raisins (50) Approx. 2 Tbsp
    Coconut dried (unsweetened) 2 Tbsp
    Cinnamon to taste
    Light Vanilla Soy Milk, 4 oz
    Ground Flax Seed Meal, 2 Tbsp

Directions

Cook oats as directed with raisins, cinnamon to taste and half of the coconut. Remove from heat when cooked. Stir in the rest of the coconut, the flax seed meal and top with light vanilla soy milk. YUM!

I usually reduce the oatmeal to 1/3 cup for a slightly smaller portion size (and fewer calories), but the 1/2 cup measurement was already entered in spark people so I used it.
