Ingredients

    * Egg, fresh, 8 jumbo
    * American Cheese, 3 oz, chopped
    * Zucchini, 2 cup, sliced
    * Broccoli, fresh, 2 cup, chopped
    * Maple Sausage, 16 oz ground
    * Prosciutto, finely chopped 3 oz
    * Green Peppers (bell peppers), 0.5 cup, chopped
    * Peppers, sweet, red, raw, sliced, .5 cup
    * Onions, raw, .5 cup, chopped
    * Pepper, black, 2 tbsp
    * Salt, 1.5 tbsp
    * Pepper Flakes, red or cayenne, 1 tsp
    * Red Ripe Tomatoes, 12 slice, medium (1/4" thick)
    * Pam spray

Directions

Preheat oven to 350
Cook sausage and prosciutto, season, set aside to cool
Cook veggies (except tomatoes), season, set aside to cool
In large bowl beat eggs and add in all ingredients, except for 1 oz of the prosciutto
Spray muffin pans with Pam
Fill halfway with mixture. place a tomato slice on top of the batter.
Place a small square of cheese on the tomato.
Sprinkle prosciutto on top and bake in oven for 10-15 minutes until bubbly.
Cool and serve. Leftovers can be frozen in ziplock bags.
