Ingredients

    1 can black beans
    1 can black eyed peas
    1 can whole corn kernels
    1 medium red onion diced
    1 medium green apple diced
    2/3 cup cider vinegar
    2/3 cup sugar or splenda
    1/3 cup canola oil

Directions

Drain and rinse the beans, peas and corn. Combine with the diced onion and green apple. In a separate bowl, stir together the vinegar, oil and splenda. Put in microwave for 30 seconds to help disolve the splenda. Pour over the other ingredients and keep covered in the fridge until ready to serve. Serve as a side dish, or with whole grain or baked tortilla scoops or chips.
