Number of Servings: 20


    5 small, or 4 large bananas, mashed
    2 eggs
    1 stick butter, softened
    1 tsp baking soda
    1 cup sugar
    2 cups flour
    1/4 cup chopped nuts (optional)


Start with your bananas, in a large bowl mash them however you can. I use a potato masher. Then add softened butter and eggs, whisking together well. Add the soda and sugar and mix well. Slowly mix in the flour. You can either mix in the nuts, or sprinkle the nuts on top of the loaf after it's in a GREASED pan.

Bake @ 350 (or 375) for at least 1 hour.
for muffins bake for 28 minutes, and check with toothpicks.
