A lactose free, gluten free, and very low-calorie dessert! A lactose free, gluten free, and very low-calorie dessert!
Number of Servings: 8


    2 cups canned pumpkin (or 14 oz can; reduce soymilk by 1 oz)
    2 eggs
    6 oz lowfat vanilla soy milk
    1/3 cup sugar
    1 tsp ground cinnamon
    1/2 tsp ground ginger
    1/4 tsp ground cloves


Stir all ingredients together until well mixed. Spray 8 ramekins with nonstick spray. Divide mixture amongst the ramekins and bake at 350F for about 20 minutes. Allow to cool before serving.

If desired, serve with fatfree Cool Whip or lowfat vanilla ice cream. Alternatively, sprinkle each little pot with sugar and carmelize like creme brulee.
