    1 egg
    1 sandwich thin
    2 slices Canadian bacon
    1 t. light mayonnaise


1. Cook the egg as you would for an over-easy egg, but break the yoke (on purpose!) before flipping it.
2. Warm the Canadian bacon in the microwave, or in another skillet.
3. Toast the bread, if you like it that way, and put it all together.

Can add tomato and/or cheese for some variety.
We also substitute vegetarian breakfast patties or sausage for the Canadian bacon, or sometimes make a plain old egg sandwich with no other meat.

Tip: Frozen bread can be placed in the toaster, as is, on the lowest setting to defrost it before you pull it apart.
