    3 large egg whites
    1 strip of turkey bacon, chopped before cooking
    1/4 C chopped onion
    2 T fresh tomato, chopped
    1 whole-wheat tortilla
    1/4 C finely shredded Cabot 75% Light Cheddar Cheese
    1 T fresh salsa


Heat a small nonstick skillet over MH heat, remove the pan and spritz with cooking spray, add the bacon, cook for two minutes, add the onion, cook 2 more minutes. Add the tomato, toss, remove from heat and transfer the bacon mixture to a bowl. Cover to keep warm. Cook your egg whites in the same pan. Mix with the bacon mixture and set aside. Cook the tortilla in the hot pan for 30 seconds a side.

Serve the tortilla with 1/4 C cheese, fresh salsa and bacon mixture.
