Introduction

These are great low carb pancakes. Eaten with sugar free syrup and some fresh berries, it's a very nice breakfast! These are great low carb pancakes. Eaten with sugar free syrup and some fresh berries, it's a very nice breakfast!

Ingredients

    2 Large Eggs
    1/4 cup Whey protein powder, vanilla flavored
    1/2 cup Low Fat Ricotta cheese
    1/2 Tsp Baking Powder
    dash of salt

Directions

Put eggs, ricotta and salt in a blender. Blend until smooth. Add remaining ingredients and blend until mixed through-do not over mix. Heat pan over medium-low heat, and when water splashed on the pan sizzles, pour small pools of batter into pan. These work best when you make smaller pancakes because they are so tender. When the tops of the pancakes bubble up and start to look dry around the edges, flip them, then put a lid on them for several seconds. Remove from pan and serve hot with your favorite low carb syrup and some fresh fruit. Enjoy!
