Ingredients

    1 T. vegetable oil
    1 lb elbow macaroni
    8 T plus 1 T butter
    2 cups half and half
    1/2 cup each of shredded mild cheddar, sharp cheedar, monterey jack and muenster cheese
    1 cup Velveeta cubed
    2 eggs, beaten
    1/4 tsp Lawry's salt

Directions

1. Preheat oven to 350. Lightly butter a deep 2 1/2 qt casserole dish.
2. Cook macaroni (approx 7 minutes).
3. Melt butter and add macaroni.
4. In a large bowl, mix all cheeses.
5. To the macaroni, add the half and half, 1 1/2 cups of cheese mixture, the cubed Velveeta and the eggs. Season with salt.
6. Transfer to casserold dish. Sprinkle with remaining cheese and dot with the 1 tablespoon butter.
7. Bake until bubbling - 35 minutes.
