Ingredients

    1 lb fresh sea scallops
    3 tbsp butter
    1 clove garlic, minced
    3 tbsp fresh basil, chopped
    2 tbsp fresh lemon juice
    salt & pepper to taste

Directions

Serves 4, 2 pts each not counting pasta
Rinse scallops in col water and pat dry with paper towel.
In large skillet, melt butter over medium heat. Add minced garlic and cook until soft. Do not brown the garlic.
Add scallops and chopped basil, saute over med-high heat, stirring constantly for 2 minutes.
Add lemon juice and continue cooking, stirring constantly for 3 more minutes.
Season with salt and pepper.
Serve over fresh cooked pasta.

    A very easy recipe. I made with whole wheat pasta. My whole family enjoyed but agreed it needed a bit more "spice" - 1/23/12

    Sounded great, but the flavor just wasn't there. Served it with Parmesan couscous, which my family said was the only thing that saved it. If I were to make it again, I would probably double the garlic, basil, seasoning and lemon juice. - 7/10/11
