    1/2 C. Canola Oil
    4 extra large Eggs, lightly beaten
    1 C Splenda Sugar Blend for Baking, may reduce if less sweetness
    1 Tbsp Anise Extract
    1 1/4 C Hodgson Mill Whole Wheat Flour
    2 C All Purpose Unbleached Flour
    1 Tbsp Baking Powder
    1/2 C Hazelnuts, lightly roasted and roughly chopped (optional)


Butter and flour a large baking sheet or cover with parchment paper.
Preheat oven to 375 degrees
Mix first 4 ingredients together in large bowl. In separate bowl, flour and baking powder.
When completed, mix dry ingredients with wet ingredients until well blended. Add chopped nuts and continue mixing into heavy dough. Divide dough into two equal parts. Form into log (about length of baking sheet) and place side by side about 3 - 4 inches apart. Press logs until about 1/2 inch thick. Use beaten egg white to wash dough. Bake for about 30 minutes. Remove from oven and cool until can handle. Slice with serated edge knife into 1/2 inch slices. Place slices cut side down on baking sheet and return to over for about 10 minutes, turn and cook other side. Remove and place on wire rack to cool. Serve with coffee, tea or milk.

Serving Size: makes about 40 biscotti, will hold for 2 - 3 weeks in tightly sealed container
