Ingredients

Crust:
Rolled Oats Whole Grain, dry, 1/2 cup
Walnuts, 1/2 cup (2 oz)
Egg White
Honey, 1 tbsp
Filling:
Cottage cheese, no salt added, 1% fat, 4 cups (32 oz)
Eggs, 2
Egg white
Flour, white, 1/4 cup
Honey, 1/3 cup
Lemon juice, fresh, 1/4 cup
Lemon zest, 1 tsp
Vanilla Extract, 2 tsp
Raisins, 1 small box (1.5 oz)
Directions
1. Make the Crust.
Preheat oven to 375F.
Put oats and nuts in food processor and chop finely. Add honey and egg white and blend together.
Spray the spring pan with a non-stick cooking spray, put the dough in it and spread it evenly. Make the crust pushing the dough with your fingers and palm.
Bake for 5-7 minutes.
2. Make the filling.
Preheat oven to 325F. Rinse the food processor.
Put all the filling ingredients, except raisins, in food processor and combine well till the mixture becomes creamy. Add raisins and mix them in with a spatula.
Pour the filling into the baked crust. Even its surface with spatula and bake for 60 minutes. Cool the cake, remove the side part of the spring pan. Refrigerate the cake before serving.
