Ingredients

    3 tbsp. olive oil
    1 medium onion - diced
    3 stalks celery - sliced
    1 or 2 cloves garlic - minced
    3/4 tsp. salt
    1/2 tsp. ground pepper
    1 lb. 85% lean ground beef
    1 lb. frozen mixed vegetables
    1 15 oz. can diced tomatoes
    3 tbsp. beef flavored soup base
    2 bay leaves
    48 oz. water
    1 cup orzo

Directions

Heat olive oil in a soup pot over medium heat. Add onion, celery salt and pepper. Reduce heat and sweat while stirring until translucent. Add garlic and stir until you smell the garlic. Don't overcook the garlic! Break up the hamburg into the pot and cook, stirring occasionally, until no longer red. Add the tomatoes and mixed vegetables. Stir together. Add water, soup base and bay leaves. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes. Add orzo and stir occasionally to prevent sticking. Cook 10-12 more minutes. Remove bay leaves. Makes 8 12-oz. servings.

    This was fantastic - thanks for sharing! In place of the frozen veggies I used fresh spinach, beet greens and zucchini, but I imagine most any non-starchy veggies would be good. My only problem was stopping at one bowl! - 7/10/08
